A Moment of Hebrew

So the people took their dough before it was leavened, their kneading bowls wrapped in their cloaks upon their shoulders.

To become sour, to become leavened (hametz), to miss out (by waiting too long, like you have to wait for bread to rise and, once it rises, you can never go back to matzah)
Pickles
Vinegar
Food prepared from five species of grain–wheat, barley, oats, spelt, and rye–that has been allowed to leaven.
Sourdough bread
חַמְצָן = (makes things ferment) Oxygen
