(10) On the seventh day, when the king was merry with wine, he ordered Mehuman, Bizzetha, Harbona, Bigtha, Abagtha, Zethar, and Carcas, the seven eunuchs in attendance on King Ahasuerus,

On the seventh day – this is the last day of the seven day feast and therefore was the climax. It also meant that when the king's heart was merry with wine – the king was more intoxicated as a result of the build-up of many days of wine coupled with his happiness seeing how everything was going according to plan.

Rabbi Elai said: In three matters a person’s true character is ascertained; in his cup, i.e., his behavior when he drinks; in his pocket, i.e., his conduct in his financial dealings with other people; and in his anger. And some say: A person also reveals his real nature in his laughter.

The Gemora here tells us that a person can be recognized for who they really are when they are in a state of drunkenness. This was seen by what he ask Vashti to do afterwards something he would have done had he remained sober.
There is a fascinating Midrash that explains the different stages a person goes through in the process of getting drunk.

The Satan made a partnership with Noach in the growing of the vine tree, the only one saved and taken into the Ark that was now replanted. He first brought a sheep and slaughtered it so that its blood fertilized the ground. He then did the same with a lion and pig.
This had an impact on the grapes produced as seen in the stages a person goes through when drinking more and more wine. First, they become sheepish and shy - like a sheep. The next stage is when they become loud and bold like a lion and then they sick up and roll around in the dirt like a pig!
There is another slightly different version brought by the Rosh quoting a Midrash:

This translates us:
"And Noach, a man of the soil, began and planted a vineyard" (Genesis 9:20), and it is taught in the Midrash that when Noach was planting it, Satan approached him and asked to be a partner in the endeavor. Satan then brought four animals—a pig, a kid, a sheep, and a monkey.
These represent the four stages of a wine drinker’s behavior depending on how much they consume:
1) if a person drinks too much, they resemble a pig wallowing and dirtying itself in mud and filth;
2) if they drink just a little to gladden their heart, they become energetic and skip around like a kid goat;
3) if they drink an intermediate amount until they become drowsy, they act like a foolish, mocking monkey;
4) if they drink moderately only during their meal, they remain calm and peaceful like a sheep.
There is even a further stage.

Rabbi Ḥanina said: They taught that an intoxicated person is responsible for all his actions only in a case where he did not reach the state of intoxication of Lot; however, if he reached the state of intoxication of Lot, so that he is altogether unaware of his actions, he is exempt from all liability.

This stage is when the person is so drunk that he is not aware of his actions and usually shortly afterwards results in him falling asleep wherever he is and in whatever position!
